North Coast Brut

Ripe, full and concentrated, our Brut boasts an intriguing and complex nose of citrus blossom and light berry. Deep and rich, yet thoroughly refreshing on the palate, its creamily textured, multilayered flavors of guava and mango segue into a crisp and refreshing finish.

Our signature “Flying by the Seat of Our Pants” Brut is a blend predominately comprised of Chardonnay and Pinot Noir that highlights the ripe fruit flavors characteristic of California’s North Coast, and particularly the Carneros region. The cooling marine influence results in grapes with deep complexity, acidity and longer ripening time.

This vintage of “Flying by the Seat of Our Pants” Brut is made from California’s North Coast Chardonnay and Pinot Noir. Our Brut grapes are harvested by hand at night or during the cool morning hours to ensure they arrive at the winery in pristine condition. The component lots of the wine are kept separate and fermented at cool temperatures in small stainless steel tanks to preserve freshness and fruit intensity. All wine is in a stainless steel tank for the first fermentation then it’s bottled to be put en tirage. During this bottling yeast and sugar are added to the wine to create in the second fermentation. While en tirage, 6 bars of pressure are created giving the wine a nice bubble, brioche yeasty notes, and superb rich Brut flavor. The Brut Reserve spends 12 months en tirage, which fosters its complex personality. Once aging is complete, the wine is riddled to remove all the lees and to clear up the wine. Then the wine is disgorged and the dosage is added. We used a Reserve Chardonnay as our dosage.
