2025 Viognier

The 2025 Kick Ranch Viognier is a lovely take on the varietal as the wine sees stainless steel drums during élevage and no secondary fermentation. Bright aromas of white peach, papaya, and honeysuckle dominate at first then slowly reveal a subtle flinty character. The palate is rich yet balanced with flavors of honeydew melon and Asian pear with and a fine spice on the finish. This dry Viognier pairs wonderfully with a wide range of dishes, especially those with a little spice.

The hand-picked Viognier was carefully night harvested when the fruit reached maturity, offering distinct varietal flavors and wonderful acidity. The grapes were delivered to Punchdown Cellars on the morning of September 10, 2022. The grapes were crushed through rollers adding to the phenolic complexity and then whole cluster pressed. The Viognier juice settled for 2 days in a chilled stainless-steel tank and then went through a cool fermentation. Midway through fermentation the wine was transferred to 75-gallon stainless-steel drums where it finished fermentation and aged for 6 months.

The grapes were gently crushed and then whole cluster pressed, and the resulting juice settled in a chilled stainless-steel tank. Fermentation began in tank before being transferred to 75-gallon stainless-steel drums where it finished fermentation and aged sur lie for 6 months.
