2021 Cabernet Sauvignon Magnum

This vintage of Cabernet Sauvignon comes from Kick Ranch in the Fountaingrove District AVA. The fruit was night harvested on October 10th and delivered to Punchdown Cellars. It was destemmed and then cold soaked for two days before being brought up to temperature and going through fermentation. The fermenting juice was pumped over twice daily to help bring out deep color and rich flavors. After fermentation was complete the young wine was barreled down in early November into 50% new French Oak barrels and 50% neutral French Oak barrels where it aged 24 months in barrel. The final wine is a blend of two clones from Kick Ranch, clone 338 and heritage clone FPS 30 (Disney clone). This unfiltered Cabernet Sauvignon was bottled November 16th, 2020 and was bottle aged for six months before released for all to enjoy.
