2021 Cabernet Sauvignon

The 2021 Kick Ranch Cabernet Sauvignon is a testament to a wonderful 2021 vintage. The wine is expressive and complex with dark red fruits bursting from the glass. The wine maintains a brightness that is complimented by structured tannins. It is at once both fresh and full. Alluring flavors of black cherry, raw cacao and black tea are woven around delightfully integrated oak.

After a particularly brief winter the 2021 growing season was a harmonious one and promises to be a great vintage for winemaking in Sonoma County. The season got off to an early start and a mild summer resulted in wonderful fruit across the county. Ideal temperatures right up to harvest coupled with a slightly below average crop size resulted in varieties ripening at similar times, making for a quick and fast-paced harvest of excellent quality. Great flavor development and acid preservation resulted in extremely balanced wines we can’t wait to share. Kick Ranch is in the Mayacamas Range along the eastern reaches of Santa Rosa and is Certified Sustainable. This beautiful hillside ranch consists of rich, red volcanic soils that offer the perfect balance of nutrients, water, and stress to our vines.

The 2021 Kick Ranch Cabernet Sauvignon is a blend of three distinct Cabernet Sauvignon Clones, 169, 338, and Disney. The component lots were fermented separately with varying extended maceration to enhance phenolic extraction and distinct clonal character. After aging as separate lots, the final blend was crafted the winter before bottling, allowing the components to integrate further during the final months of barrel aging.

Roasted mushrooms, New York steak, creamy mashed potatoes
